Open almost any nutrition tracker and look at how a nutrient is drawn. It’s a bar. It fills from left to right. When it reaches the end, you’re done - green checkmark, goal met, good job. The visual language is unmistakable: this is a target, and more progress toward it is better.
That works fine for something like fiber. It’s actively misleading for about half the nutrients on the screen.
The shape nobody draws
Most micronutrients don’t have a target. They have a range. Below the bottom of it you’re deficient. Above the top of it you’re in a zone where intake starts causing problems of its own. The curve isn’t a ramp - it’s a U, and you want to be sitting in the flat part at the bottom.
Nutrition science has had a name for the top of that range for decades. The Institute of Medicine publishes a Tolerable Upper Intake Level - a UL - alongside the RDA for most nutrients. It’s defined as the highest daily intake likely to pose no risk of adverse effects for nearly everyone. It’s not a secret, it’s not fringe, and it’s sitting in the same reference tables every app pulls its RDAs from.
Apps just don’t show it. They pull the RDA, draw a bar to it, and throw the other number away.
Where the ceiling is actually low
The gap between “recommended” and “too much” is narrower than most people assume, and for a few nutrients it’s alarmingly narrow.
Zinc. The adult RDA is 11 mg for men, 8 mg for women. The upper limit is 40 mg. That sounds like a lot of headroom until you notice that plenty of zinc supplements are sold at 50 mg per capsule - above the ceiling on its own, before you’ve eaten anything. Sustained high zinc intake competes with copper absorption, and copper deficiency shows up as anemia and neurological symptoms that look like a dozen other things.
Preformed vitamin A. RDA is 900 µg for men, 700 µg for women. Upper limit is 3,000 µg. A single 3-ounce serving of beef liver can carry two to three times that ceiling by itself. This is the one that catches people eating organ meats deliberately for the nutrient density - the density is real, and it’s exactly why the portion matters. (Beta-carotene from plants is a different story; your body converts it as needed and doesn’t have the same problem.)
Selenium. RDA is 55 µg. Upper limit is 400 µg. Brazil nuts average somewhere around 70-90 µg per nut, and the variation between nuts is enormous depending on the soil they grew in. Two a day is a reasonable selenium strategy. A handful a day, every day, is not.
Sodium. RDA-equivalent intake is 1,500 mg, upper limit 2,300 mg. Average intake in the US runs closer to 3,400 mg. This is the one nutrient where most people are over the ceiling on food alone, no supplements involved, and it’s the one an app is most likely to actually catch.
Niacin. RDA is 16 mg for men, 14 mg for women, ceiling 35 mg. Fortified cereals plus a B-complex will clear that without much effort. The flushing reaction people report from high-dose niacin is the mild version of what the limit is there to prevent.
Iron. RDA is 18 mg for premenopausal women but only 8 mg for men, with a 45 mg ceiling for both. Men and postmenopausal women have no routine way to shed excess iron, and for the meaningful slice of people carrying a hemochromatosis variant, a “just in case” iron supplement is genuinely the wrong move.
Folic acid. The 1,000 µg adult limit is about synthetic folic acid from fortification and supplements, not folate from food. High folic acid intake can mask the blood signature of a B12 deficiency while the neurological damage continues underneath - which is a strange and specific kind of harm: the nutrient isn’t hurting you directly, it’s hiding something else.
The honest caveats
An upper limit isn’t a cliff edge. Going over on one day does not mean anything happened to you. These numbers are built around sustained daily intake with safety margins already baked in, which is precisely why a tracker that screams at you for a single high-sodium restaurant meal is producing noise rather than information.
That’s the reason the “High This Week” card in Nutrient Logger averages your intake across the days you logged rather than flagging spikes. One salty dinner shouldn’t set off an alarm. Seven of them in a row is a pattern, and a pattern is the only thing worth telling you about.
Some nutrients also have a limit that doesn’t apply to food at all. Magnesium is the clearest case: there’s a 350 mg ceiling on supplemental magnesium, because that’s the amount that starts causing digestive trouble, but there’s no established limit on magnesium from food. Your body handles dietary magnesium fine. So the app shows no ceiling for magnesium, deliberately - putting a food-intake limit there would flag people for eating vegetables.
And the biggest caveat of all: a food tracker sees food. It doesn’t see the multivitamin you took this morning, and that’s exactly where most real-world overshoot comes from. Very few people cross the zinc ceiling by eating. They cross it with a capsule. The upper limits are still worth knowing for that reason alone - if your app tells you you’re already at 90% of the niacin ceiling from food, that reframes what a B-complex on top of it is actually doing.
Why this is in the app
When I built the weekly nutrient watch, the deficiency half was obvious - that’s the whole premise of a micronutrient tracker, and it’s what people expect. The upper-limit half was the part that felt overdue. I had the ceiling data already; every RDA entry in the app carries its upper limit right alongside the recommended amount, adjusted for age and sex the same way. Showing one number and discarding the other was a choice, and it was the wrong one.
So now the progress bars change when you’ve gone past the limit instead of just sitting there full, and the weekly watch surfaces what’s running high next to what’s running low. Same card, both directions.
None of this is a reason for anxiety about your diet. The overwhelming majority of over-the-ceiling intake traces back to supplements taken with good intentions and no feedback loop, and the fix is usually just knowing the number. But it’s a strange gap in how these apps work that the entire industry draws nutrition as a bar that fills up, when the actual science has been describing a range this whole time.
The goal was never to max out every bar. It was to land in the range.
