I’m going to say something that might get me yelled at in r/carnivore: eating meat doesn’t automatically mean you’re getting all your micronutrients.

Before you close the tab - I’m not anti-carnivore. I eat an animal-based diet. I think whole animal foods are the most nutrient-dense foods on the planet, and I think the carnivore community has gotten a lot of things right that mainstream nutrition still hasn’t caught up to.

But “carnivore is nutrient-dense” and “your specific carnivore diet covers everything” are two different claims. The first is true. The second deserves scrutiny.

Here’s what the data actually shows when you track micronutrients on a carnivore diet.

The muscle meat problem

Most people doing carnivore are eating predominantly muscle meat. Ribeyes, ground beef, chicken thighs, pork chops. That’s the accessible, delicious, easy part of animal eating.

Muscle meat is genuinely excellent food. High-quality protein, good fat, B vitamins, zinc, iron, selenium. Hard to complain.

But muscle meat is not the whole animal. And when you look at the full nutrient profile, a diet built primarily on muscle meat has some consistent gaps.

Magnesium

This is probably the most common deficiency I see when carnivore eaters actually track their intake. Beef is decent, about 20-25mg per 100g, but not exceptional. To hit even the standard RDA of 400mg, you’d need to eat a truly massive amount of muscle meat.

The carnivore community often dismisses RDAs as irrelevant, and there’s something to that argument in general. But magnesium affects sleep quality, muscle recovery, and nervous system function in ways that are hard to argue away. If you’re sleeping poorly or cramping, magnesium is worth investigating before assuming it’s adaptation.

Oysters, salmon, and dark chocolate (not strictly carnivore but animal-based adjacent) are better sources. Liver helps but isn’t exceptional for magnesium either.

Manganese

This is the one almost nobody on carnivore is talking about. Manganese is genuinely difficult to get from animal foods alone. It’s abundant in plant foods - like grains, legumes, and leafy greens - but animal sources are poor.

Muscle meat has almost none. Liver and shellfish are the best animal sources, but even those are modest compared to what you’d get from a cup of oats or black beans.

Is this a problem? Honestly, the research on manganese deficiency in humans is limited, and requirements aren’t well established. But if you’re tracking micronutrients and you see a consistent gap there, this is why.

Vitamin C

The vitamin C question on carnivore is genuinely interesting and more nuanced than either side admits.

The common carnivore argument is that you don’t need vitamin C if you’re not eating carbohydrates, because glucose and vitamin C compete for the same cellular transporters. Without carbs flooding the system, your cells absorb vitamin C more efficiently and you need less of it. There’s some science behind this.

What’s also true: raw organ meats, particularly adrenal glands, contain meaningful vitamin C. Fresh liver has a small amount. But if you’re cooking everything and eating mostly muscle meat, your vitamin C intake is going to be very low by any standard measurement.

I think the carnivore community is probably right that requirements are lower without carbohydrate competition. But it’s worth tracking rather than assuming, especially if you notice symptoms like poor wound healing or fatigue.

Iodine

Unless you’re eating a lot of seafood or including dairy, iodine can be surprisingly low on carnivore. Muscle meat from land animals contains minimal iodine. Seafood is the richest animal source. Cod, shrimp, and oysters. If these aren’t regulars in your rotation, it’s worth checking.

Iodine matters for thyroid function. Low thyroid function looks a lot like low energy and slow metabolism, which some people on carnivore experience and attribute to other causes.

Vitamin E

Vitamin E is low in lean muscle meat and only meaningfully present in fattier cuts and certain organ meats. It’s also highly dependent on the animal’s diet. Grass-fed and pasture-raised animals have better profiles than conventionally raised ones.

If you’re eating fatty cuts from quality animals, you’re doing better here. If you’re eating conventional ground beef and chicken breast, this gap is real.

What carnivore gets right — and what closes the gaps

Here’s the important counterpoint: the worst gaps on a carnivore diet are closed almost entirely by one practice that the best carnivore advocates have always recommended: eating nose to tail.

Liver is probably the single most micronutrient-dense food that exists. It covers vitamin A, B12, folate, riboflavin, copper, iron, and more - at levels that make most supplements look modest. If you’re eating liver once or twice a week, you’re covering your bases on a long list of nutrients that are otherwise hard to get.

Oysters are exceptional for zinc and copper. Eggs cover choline and fat-soluble vitamins. Bone broth and cartilage add things that muscle meat simply doesn’t have.

The gap isn’t between carnivore and some other diet. The gap is between whole-animal carnivore and muscle-meat-only carnivore. The people who eat the full range of animal foods (organs, seafood, eggs, bone, fat) are doing remarkably well nutritionally. The people eating mostly lean muscle meat are not.

Why you should track instead of assume

The carnivore community has a general attitude of “we don’t need to track. Just eat meat.” I understand the appeal of that. Tracking is tedious. And the whole point of eating this way for many people is to simplify their relationship with food.

But “I feel good” and “I’m getting everything I need” aren’t the same thing. Subclinical deficiencies, levels low enough to affect function but not cause obvious symptoms, can exist for years before they become obvious problems.

A ribeye is not a ribeye is not a ribeye, nutritionally speaking. Grass-fed vs. grain-fed, fatty cuts vs. lean, fresh vs. frozen. The nutrient profiles differ. You can’t know without looking.

The bottom line

Carnivore done right - organs, seafood, eggs, quality fats, the whole animal - is genuinely one of the most complete ways to eat. I believe that and I mostly eat that way myself.

But most people doing carnivore are not eating that way. They’re eating ribeyes, ground beef, and bacon, and assuming the nutrient density argument covers them without checking.

Track your intake for a week. See where you land on magnesium, manganese, vitamin C, iodine, and vitamin E. If you’re eating nose to tail, you’ll probably be reassured. If you’re mostly eating muscle meat, you’ll find some things worth adjusting.

Either way, you’ll know instead of guess.
